Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 2 tbsp granulated sugar
Filling
  • 16 oz cream cheese softened
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 cup heavy cream whipped
Blueberry Swirl
  • 1 cup blueberries fresh or frozen
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice

Method
 

  1. Line an 8x8-inch pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, and sugar. Press into pan and freeze.
  3. Cook blueberries, sugar, and lemon juice until thickened. Cool completely.
  4. Beat cream cheese with powdered sugar, vanilla, and lemon zest.
  5. Fold whipped cream into cheesecake mixture.
  6. Spread filling over crust and swirl in blueberry mixture.
  7. Freeze for at least 4 hours until firm.
  8. Slice into bites and serve frozen.

Notes

Allow bites to sit for a few minutes before serving for a softer texture.
