Ingredients
  

Crust
  • 2 cups chocolate cookie crumbs
  • 0.5 cup unsalted butter melted
Filling
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 3.9 oz instant chocolate pudding mix
  • 1.5 cups cold milk
  • 1.5 cups whipped topping
Topping
  • 1 cup evaporated milk
  • 0.75 cup brown sugar packed
  • 3 egg yolks
  • 0.5 cup unsalted butter
  • 1 tsp vanilla extract
  • 1.5 cups sweetened shredded coconut
  • 1 cup chopped pecans

Method
 

  1. Mix cookie crumbs and melted butter, press into pie dish, and chill.
  2. Beat cream cheese, powdered sugar, and vanilla until smooth.
  3. Whisk pudding mix with milk and combine with cream cheese mixture.
  4. Fold in whipped topping and spread into crust.
  5. Cook evaporated milk, brown sugar, and egg yolks until thickened.
  6. Stir in butter, vanilla, coconut, and pecans.
  7. Spread topping over filling and chill until set.

Notes

Chill overnight for best texture and flavor.
