No-Bake Mint Chocolate Chip Truffles

Ingredients
  

Truffle Base
  • 1.5 cups crushed chocolate sandwich cookies
  • 4 oz cream cheese softened
  • 1 cup powdered sugar
  • 0.5 tsp mint extract
  • 0.5 cup mini chocolate chips
Coating
  • 2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Mix crushed cookies and cream cheese until smooth.
  2. Add powdered sugar and mint extract; mix well.
  3. Fold in mini chocolate chips.
  4. Chill mixture for 30 minutes.
  5. Roll into balls and place on tray.
  6. Freeze for 15–20 minutes.
  7. Melt chocolate with oil until smooth.
  8. Dip truffles in chocolate and let set in fridge.

Notes

Adjust mint extract carefully to avoid overpowering flavor. Store chilled.
