Ingredients
  

Pecan Pie Bites
  • 2 cups raw pecans lightly toasted
  • 1 cup Medjool dates pitted
  • 1 cup almond flour
  • 2 tbsp maple syrup
  • 1 tbsp butter melted
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 0.25 tsp sea salt
  • 2 tbsp mini chocolate chips optional
  • 0.25 cup chopped pecans for coating

Method
 

  1. Toast pecans in a dry skillet over medium heat for 3–4 minutes until fragrant. Cool slightly.
  2. Add toasted pecans to a food processor and pulse until finely chopped.
  3. Add dates, almond flour, maple syrup, melted butter, vanilla, cinnamon, and sea salt.
  4. Blend until the mixture becomes sticky and fully combined.
  5. Fold in chocolate chips if using.
  6. Roll mixture into bite-sized balls using about 1 tablespoon per bite.
  7. Coat bites in chopped pecans and place on a parchment-lined tray.
  8. Refrigerate for at least 20 minutes before serving.

Notes

For softer bites, allow refrigerated bites to sit at room temperature for 5 minutes before serving. Store chilled for best texture.
