Method
- Toast pecans in a dry skillet over medium heat for 3–4 minutes until fragrant. Cool slightly.
- Add toasted pecans to a food processor and pulse until finely chopped.
- Add dates, almond flour, maple syrup, melted butter, vanilla, cinnamon, and sea salt.
- Blend until the mixture becomes sticky and fully combined.
- Fold in chocolate chips if using.
- Roll mixture into bite-sized balls using about 1 tablespoon per bite.
- Coat bites in chopped pecans and place on a parchment-lined tray.
- Refrigerate for at least 20 minutes before serving.
Notes
For softer bites, allow refrigerated bites to sit at room temperature for 5 minutes before serving. Store chilled for best texture.
