- Blend dates, peanut butter, vanilla, and warm water until smooth caramel forms.
- Mix caramel with chopped nuts and form into bite-sized mounds on parchment-lined tray.
- Freeze 20–30 minutes until firm.
- Melt chocolate chips with coconut oil in microwave in 20-second intervals until smooth.
- Dip frozen nut bites into melted chocolate and return to tray.
- Sprinkle with flaky sea salt and refrigerate until chocolate sets.
