Ingredients
  

Date Caramel
  • 1 cup Medjool dates pitted
  • 2 tbsp peanut butter or almond butter
  • 1 tsp vanilla extract
  • 1-2 tbsp warm water as needed
Nut Layer
  • 1.5 cups mixed roasted nuts roughly chopped
Chocolate Coating
  • 1.5 cups dark chocolate chips
  • 1 tbsp coconut oil
  • flaky sea salt for topping

Method
 

  1. Blend dates, peanut butter, vanilla, and warm water until smooth caramel forms.
  2. Mix caramel with chopped nuts and form into bite-sized mounds on parchment-lined tray.
  3. Freeze 20–30 minutes until firm.
  4. Melt chocolate chips with coconut oil in microwave in 20-second intervals until smooth.
  5. Dip frozen nut bites into melted chocolate and return to tray.
  6. Sprinkle with flaky sea salt and refrigerate until chocolate sets.

Store refrigerated up to 1 week or freeze up to 2 months.
