Ingredients
  

Crust
  • 1 cup rolled oats
  • 1 cup almonds
  • 6-8 Medjool dates pitted
  • 2 tbsp coconut oil melted
Filling
  • 1.5 cups raw cashews soaked
  • 1 cup mango chunks
  • 0.5 cup coconut milk
  • 0.33 cup maple syrup

Equipment

Method
 

  1. Blend crust ingredients and press into pan.
  2. Blend filling ingredients until smooth.
  3. Pour filling over crust and freeze until firm.
  4. Slice and serve chilled.

Notes

Soak cashews for best texture and allow bars to thaw slightly before slicing.
