Ingredients
  

Cookie Dough
  • 1.75 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.5 cup creamy peanut butter
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
Filling
  • 0.5 cup raspberry or grape jelly

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk flour, baking soda, and salt together in a bowl.
  3. Cream butter, peanut butter, and sugars until light and fluffy.
  4. Beat in egg and vanilla until combined.
  5. Gradually add dry ingredients and mix to form dough.
  6. Roll dough into balls and place on sheets 2 inches apart.
  7. Press thumb into each to make an indentation and fill with jam.
  8. Bake 10–12 minutes until edges are golden. Cool before serving.

Notes

Use creamy peanut butter for best texture and avoid overfilling the jam wells.
