Filling
  • 6 cups blackberries fresh or thawed if frozen
  • 1 cup granulated sugar
  • 2 tbsp lemon juice
  • 2 tbsp cornstarch optional, for thicker filling
  • 1 tsp vanilla extract
  • 1 pinch salt
Batter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 0.25 tsp salt
  • 1 cup whole milk
  • 0.5 cup unsalted butter melted
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a bowl, combine blackberries, sugar, lemon juice, cornstarch, vanilla, and salt. Let sit 10 minutes.
  3. In another bowl, whisk flour, sugar, baking powder, and salt. Stir in milk and vanilla until smooth.
  4. Pour melted butter into the baking dish without stirring.
  5. Pour the batter over the butter, then spoon blackberries evenly over the batter. Do not mix.
  6. Bake 45–55 minutes until the crust is golden and filling is bubbling.
  7. Cool for 15 minutes before serving. Serve warm with ice cream or whipped cream.

Notes

For a crispier top, sprinkle coarse sugar before baking. Use frozen blackberries if fresh are unavailable.
