Ingredients
  

Chicken and Rice Base
  • 2 tbsp olive oil
  • 1 lb boneless skinless chicken breasts cut into cubes
  • salt and pepper to taste
  • 1 small onion diced
  • 1 red bell pepper chopped
  • 3 cloves garlic minced
  • 1 cup long-grain white rice uncooked
  • 2 cups chicken broth
  • 0.5 cup BBQ sauce bold or smoky
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp smoked paprika
  • 0.5 tsp chili powder optional
Garnish
  • chopped scallions
  • sesame seeds optional

Method
 

  1. Heat olive oil in a skillet and sear chicken until golden brown. Remove and set aside.
  2. Sauté onion and bell pepper until soft. Add garlic and cook briefly.
  3. Stir in rice and toast for 1 minute.
  4. Add broth, BBQ sauce, honey, soy sauce, paprika, and chili powder. Mix well.
  5. Return chicken to pan, cover, and simmer on low for 18–20 minutes.
  6. Fluff rice, garnish with scallions and sesame seeds, and serve.

Notes

Use a smoky BBQ sauce for maximum flavor. Add hot sauce for heat or pineapple for sweetness.
