- Brown ground beef in a large skillet over medium-high heat. Drain excess grease.
- Add onion and garlic, sauté until fragrant.
- Push beef aside, melt butter, and stir in flour to create a roux.
- Gradually add milk and broth, whisking until thickened.
- Add potatoes, paprika, thyme, salt, and pepper. Stir well.
- Cover and simmer for 15–20 minutes until potatoes are tender.
- Stir in 1½ cups cheese, top with remaining cheese, and cover until melted.
- Garnish with parsley and serve hot.
Notes
Use a mandoline for even potato slices. Add veggies for color and flavor.
