  • 1 tbsp apple cider vinegar or lemon juice
Chicken and Rice
  • 4 boneless skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 1 cup long-grain white rice uncooked
  • 2 cups chicken broth low sodium
  • 1 tbsp soy sauce
  • 0.5 tsp paprika
  • 0.25 tsp chili flakes optional
  • 2 tbsp parsley chopped, for garnish

Equipment

  • Mixing bowls
  • Spatula
  • Measuring cups

Method

  1. Season chicken with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden; remove and set aside.
  3. Melt butter in the same skillet. Add minced garlic, honey, soy sauce, and vinegar. Simmer for 1–2 minutes.
  4. Add uncooked rice and stir to coat in the sauce.
  5. Pour in chicken broth and soy sauce. Nestle chicken pieces on top.
  6. Cover and simmer on low for 20–25 minutes until rice is tender and liquid absorbed.
  7. Remove lid, garnish with parsley, and drizzle extra honey if desired. Serve warm.

Notes

Best served fresh with extra honey drizzle. Use long-grain rice for best results.
