Ingredients
  

Main Dish
  • 1.5 lbs boneless skinless chicken thighs cut into bite-sized pieces
  • 1.5 cups jasmine rice rinsed
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp yellow curry paste
  • 1 can coconut milk 13.5 oz full-fat
  • 1.5 cups chicken broth
  • 1 tbsp fish sauce

Equipment

Method
 

  1. Sauté onion, garlic, and ginger in oil until fragrant.
  2. Stir in curry paste and spices, cooking briefly.
  3. Add chicken and cook until lightly browned.
  4. Stir in rice, vegetables, coconut milk, and broth.
  5. Cover and simmer 18-20 minutes until rice is tender.
  6. Rest 5 minutes, fluff, garnish, and serve.

Notes

Adjust spice level to taste and use full-fat coconut milk for best texture.
