Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil if needed
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 carrot diced
  • 1 stalk celery diced
  • 4 cups beef broth
  • 2 cups milk whole or 2%
  • 1 cup heavy cream
  • 2 cups elbow macaroni uncooked
  • 2 cups cheddar cheese shredded
  • 1 tsp Worcestershire sauce
  • 1 tsp mustard yellow or Dijon
  • 1 tsp paprika
  • salt and pepper to taste
  • parsley for garnish
  • green onions for garnish

Method
 

  1. Cook ground beef in a large pot until browned, drain excess grease if needed.
  2. Add onion, garlic, carrot, and celery. Cook until softened.
  3. Stir in Worcestershire sauce, mustard, paprika, salt, and pepper.
  4. Pour in beef broth, milk, and heavy cream. Bring to a simmer.
  5. Add uncooked macaroni and cook until pasta is tender.
  6. Lower heat and stir in shredded cheddar cheese until melted and creamy.
  7. Taste and adjust seasoning. Garnish with parsley and green onions before serving.

Notes

For extra richness, add a handful of cooked bacon or a dollop of sour cream.
