Method
- Cook pasta 1–2 minutes less than package instructions, drain, and set aside.
- In the same pot, melt butter with olive oil over medium heat. Sauté garlic 30 seconds.
- Add mushrooms and cook until golden brown, about 5–6 minutes.
- Pour in broth and cream, stir, and bring to a gentle simmer.
- Add spinach and cook until wilted, about 2 minutes.
- Return pasta to the pot and stir to coat with sauce.
- Add Parmesan, salt, pepper, and red pepper flakes. Cook 2–3 minutes until sauce thickens.
- Finish with lemon juice if using, garnish, and serve immediately.
Notes
For extra flavor, use a mix of mushrooms and freshly grated parmesan. Leftovers reheat with a splash of milk.
