Ingredients
  

Nachos
  • 12 oz tortilla chips
  • 1 lb ground beef or turkey
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 15 oz black beans drained and rinsed
  • 1 cup corn optional
  • 3 cups shredded cheese cheddar + Monterey Jack blend
  • 1 tomato diced
  • 1 jalapeño sliced
Toppings
  • sour cream for drizzling
  • guacamole optional
  • fresh cilantro chopped
  • lime wedges for serving

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment.
  2. Cook ground beef with onion and garlic until browned. Drain excess fat.
  3. Add taco seasoning and simmer 2–3 minutes.
  4. Layer chips, cheese, beef, beans, and corn on baking sheet. Repeat for even layering.
  5. Add diced tomato and jalapeño slices on top.
  6. Bake 10–12 minutes until cheese is melted and bubbly.
  7. Top with sour cream, guacamole, cilantro, and lime juice. Serve warm.

Notes

For vegetarian nachos, omit beef and add roasted vegetables or extra beans.
