Ingredients
  

Main Ingredients
  • 400 g wide rice noodles
  • 250 g chicken breast sliced
  • 2 cups Chinese broccoli
  • 3 cloves garlic minced
  • 2 eggs
  • 2 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1 tbsp vegetable oil

Equipment

  • Wok or large skillet
  • Mixing bowls
  • Spatula
  • Knife

Method
 

  1. Prepare noodles and set aside.
  2. Mix soy sauces, oyster sauce, and sugar.
  3. Heat oil in wok and cook garlic briefly.
  4. Add chicken and cook until done.
  5. Scramble eggs in the pan.
  6. Add Chinese broccoli and stir-fry.
  7. Add noodles and sauce, toss gently.
  8. Let noodles char slightly, then serve hot.

Notes

Use high heat and avoid over-stirring for authentic flavor.
