- Preheat oven to 350°F (175°C) and grease a baking dish.
- Cook sausage in a skillet until browned; drain and set aside.
- Whisk pancake mix, milk, eggs, melted butter, maple syrup, and vanilla until smooth.
- Fold cooked sausage into the batter.
- Pour mixture into prepared baking dish and spread evenly.
- Bake 35–40 minutes until set and lightly golden.
- Cool slightly, slice, and serve warm with syrup.
