Ingredients
  

Base Ingredients
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 8 oz mushrooms sliced
  • 1 onion diced
  • 4 cloves garlic minced
  • 2 cups chicken broth or vegetable broth
  • 1 cup heavy cream
  • 8 oz pasta uncooked
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Finishing Ingredients
  • 3 cups spinach fresh
  • 1 cup Parmesan cheese grated
  • fresh parsley for garnish

Equipment

  • Large skillet
  • Cutting board

Method
 

  1. Heat olive oil and butter in a large skillet and sauté mushrooms until browned.
  2. Add diced onion and cook until softened, then add garlic until fragrant.
  3. Stir in broth, cream, uncooked pasta, Italian seasoning, salt, and pepper.
  4. Simmer covered for 12–15 minutes, stirring occasionally, until pasta is tender.
  5. Stir in fresh spinach until wilted.
  6. Remove from heat and mix in grated Parmesan until creamy.
  7. Garnish with parsley and serve warm.

Notes

For extra flavor, add 1/4 cup sun-dried tomatoes or drizzle pesto on top.
