  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup diced peaches fresh or canned, drained
Glaze
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Method
 

  1. Cream butter, granulated sugar, and brown sugar until fluffy. Beat in egg and vanilla.
  2. Whisk flour, baking powder, baking soda, cinnamon, and salt. Mix into wet ingredients until combined. Fold in diced peaches.
  3. Preheat oven to 350°F. Scoop dough onto parchment-lined baking sheet and bake 12–14 minutes until golden.
  4. Cool on wire rack. Whisk glaze ingredients and drizzle over cooled cookies.
