  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Pecan Filling
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar
  • 2 tbsp unsalted butter melted
  • 1 tsp vanilla extract
  • salt pinch

Method
 

  1. Cream butter, brown sugar, and granulated sugar until light and fluffy. Beat in egg and vanilla.
  2. Whisk flour, baking soda, and salt. Gradually mix into wet ingredients until dough forms.
  3. Combine chopped pecans, brown sugar, melted butter, vanilla, and pinch of salt for filling.
  4. Form cookies with dough and pecan filling, place on parchment-lined baking sheet.
  5. Bake at 350°F for 12–15 minutes. Cool on wire rack. Optional: drizzle with caramel.
