  • 2.25 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.5 tsp peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 0.5 cup crushed candy canes plus extra for topping

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, beat butter and sugars until light and fluffy.
  4. Mix in the egg, vanilla extract, and peppermint extract.
  5. Gradually add dry ingredients to the wet mixture until combined.
  6. Fold in chocolate chips and crushed candy canes.
  7. Scoop dough onto baking sheets and bake for 9–11 minutes until edges are golden.
  8. Sprinkle extra crushed candy cane on top while warm and cool on a wire rack.

Store in an airtight container for up to 5 days or freeze dough for later use.
