Method
- Spread butter on one side of each bread slice.
- Layer mozzarella, pepperoni, cheddar, and remaining mozzarella on the unbuttered side.
- Top with second slice of bread, buttered side out.
- Heat skillet over medium heat.
- Grill sandwich 3–4 minutes per side until golden brown and cheese melts.
- Remove, rest 1 minute, slice, and serve warm.
Notes
For extra flavor, sprinkle parmesan on bread before grilling or add jalapeños for spice.
