Avocado Toast
  • 2 slices sourdough bread
  • 1 ripe avocado
  • 1 tbsp lemon juice fresh
  • 1 tbsp olive oil extra virgin
  • 2 eggs large
  • to taste salt
  • to taste black pepper freshly ground
  • 2 tbsp fresh herbs chopped

Method
 

  1. Bring water to a gentle boil and cook eggs for 7 minutes.
  2. Transfer eggs to an ice bath and cool completely before peeling.
  3. Toast bread slices until golden and crisp.
  4. Mash avocado with lemon juice, olive oil, salt, and pepper.
  5. Spread avocado mixture over toast.
  6. Slice eggs and place over avocado toast.
  7. Finish with herbs, salt, and pepper. Serve immediately.
