Method
- Preheat oven to 425°F (220°C).
- Wash and scrub potatoes thoroughly, then pat completely dry.
- Pierce potatoes several times with a fork.
- Rub potatoes with olive oil and coat generously with sea salt.
- Place potatoes directly on oven rack with baking sheet underneath.
- Bake 50–60 minutes until skins are crispy and interiors are tender.
- Slice potatoes open carefully and fluff interiors with a fork.
- Top with butter, cheddar cheese, sour cream, chives, black pepper, and bacon bits before serving.
Notes
For extra crispy skins, avoid wrapping potatoes in foil and bake directly on the oven rack.
