- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Whisk together olive oil, Dijon mustard, lemon juice, honey, garlic, lemon zest, salt, pepper, and parsley.
- Season salmon fillets with salt and pepper.
- Place salmon on the baking sheet and brush generously with the lemon Dijon marinade.
- Top with lemon slices.
- Bake for 12–15 minutes until salmon is opaque and flakes easily with a fork.
- Spoon any leftover marinade from the pan over the salmon before serving.
- Garnish with fresh parsley and serve warm.
