Ingredients
  

Salmon
  • 4 fillets salmon about 6 oz each
  • 1 lemon sliced for topping
  • salt and pepper to taste
Lemon Dijon Marinade
  • 3 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp honey
  • 3 cloves garlic minced
  • 1 tsp lemon zest
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Whisk together olive oil, Dijon mustard, lemon juice, honey, garlic, lemon zest, salt, pepper, and parsley.
  3. Season salmon fillets with salt and pepper.
  4. Place salmon on the baking sheet and brush generously with the lemon Dijon marinade.
  5. Top with lemon slices.
  6. Bake for 12–15 minutes until salmon is opaque and flakes easily with a fork.
  7. Spoon any leftover marinade from the pan over the salmon before serving.
  8. Garnish with fresh parsley and serve warm.
