  • 4-6 lb bone-in prime rib roast
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme
  • 2 tsp salt
  • 1.5 tsp black pepper
  • 2 tbsp butter softened

Method
 

  1. Bring roast to room temperature for 2 hours.
  2. Preheat oven to 450°F.
  3. Mix oil, garlic, herbs, salt, and pepper.
  4. Rub mixture over roast and coat with butter.
  5. Place roast bone-side down in pan.
  6. Roast 20 minutes at high heat.
  7. Reduce to 325°F and cook until desired doneness.
  8. Rest 20–30 minutes before slicing.

Notes

Always use a thermometer for best results. Letting the meat rest is essential for juiciness.
