Ingredients
  

Salad
  • 3 Persian cucumbers finely diced
  • 3 tomatoes finely diced
  • 1 red onion finely chopped
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp dried mint
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Finely dice cucumbers and tomatoes.
  2. Finely chop the onion.
  3. Combine vegetables in a bowl.
  4. Mix lemon juice, olive oil, mint, salt, and pepper.
  5. Pour dressing over salad and toss well.
  6. Chill briefly and serve fresh.
