Ingredients
  

Chicken
  • 1.5 lb chicken thighs
  • 4 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp lime juice
  • 2 tbsp olive oil
Rice
  • 1.5 cups long-grain white rice
  • 1 cup chopped onion
  • 2 cloves garlic minced
  • 0.5 tsp turmeric
  • 3 cups chicken broth
  • 1 tbsp olive oil
Green Sauce
  • 1 cup fresh cilantro packed
  • 2 jalapeños
  • 2 cloves garlic
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 2 tbsp lime juice
  • 2 tbsp olive oil

Equipment

  • Large skillet
  • Medium pot with lid
  • Blender
  • Mixing bowls

Method
 

  1. Mix garlic, spices, lime juice, and olive oil. Coat chicken and marinate.
  2. Blend all green sauce ingredients until smooth. Chill.
  3. Cook chicken in a hot skillet until golden and cooked through. Set aside.
  4. Sauté onion and garlic with oil and turmeric. Add rice and stir.
  5. Add broth, cover, and simmer until rice is tender.
  6. Nestle chicken over rice and rest briefly.
  7. Serve with generous green sauce drizzle.

Green sauce can be made up to 3 days ahead.
