Ingredients
  

Chicken
  • 1.5 lb boneless skinless chicken thighs
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tbsp lime juice fresh
Rice
  • 1.5 cups long-grain white rice
  • 3 cups chicken broth
  • 1 tsp turmeric
Green Sauce
  • 1 cup fresh cilantro packed
  • 1-2 jalapeños
  • 0.5 cup Greek yogurt or mayonnaise

Equipment

  • Large skillet or grill pan
  • Medium pot with lid
  • Blender or food processor
  • Mixing bowls

Method
 

  1. Marinate chicken with spices, garlic, lime juice, and olive oil for at least 30 minutes.
  2. Sauté onion and garlic with turmeric, add rice and broth, then simmer until tender.
  3. Cook marinated chicken in a hot skillet until golden and fully cooked.
  4. Blend all green sauce ingredients until smooth and creamy.
  5. Serve chicken over rice and drizzle generously with green sauce.

Notes

Green sauce can be made ahead and stored refrigerated for up to 3 days.
