Ingredients
  

Relish Ingredients
  • 2 cups red bell pepper finely diced
  • 1 cup green bell pepper finely diced
  • 1 cup yellow bell pepper finely diced
  • 1.5 cups onion finely chopped
  • 1.5 cups white vinegar
  • 1 cup granulated sugar
  • 1 tsp salt
  • 0.5 tsp mustard seeds
  • 0.5 tsp celery seeds
  • 0.25 tsp chili flakes optional

Method
 

  1. Finely dice peppers and onions and place them in a large bowl.
  2. In a saucepan, combine vinegar, sugar, salt, mustard seeds, celery seeds, and chili flakes. Bring to a gentle boil.
  3. Add peppers and onions, stir, and simmer for 10–12 minutes until tender but not mushy.
  4. Remove from heat, cool slightly, and spoon into clean glass jars with liquid.
  5. Cool completely before refrigerating. Chill at least 4 hours before serving.

Notes

Refrigerate for up to 3 months. Flavor improves after 1–2 days.
