Method
- Finely dice peppers and onions and place them in a large bowl.
- In a saucepan, combine vinegar, sugar, salt, mustard seeds, celery seeds, and chili flakes. Bring to a gentle boil.
- Add peppers and onions, stir, and simmer for 10–12 minutes until tender but not mushy.
- Remove from heat, cool slightly, and spoon into clean glass jars with liquid.
- Cool completely before refrigerating. Chill at least 4 hours before serving.
Notes
Refrigerate for up to 3 months. Flavor improves after 1–2 days.
