Ingredients
  

Jam Base
  • 1 lb bacon, chopped
  • 1 medium yellow onion, diced
  • 3 cups fresh pineapple, chopped
  • 3/4 cup brown sugar
  • 1/3 cup apple cider vinegar
  • 3 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili flakes optional
  • 1/4 tsp black pepper
  • 1 tbsp maple syrup optional

Method
 

  1. Cook bacon in a skillet over medium heat until crispy, then remove and set aside, leaving some fat in the pan.
  2. Sauté onions in bacon fat until soft and caramelized.
  3. Add garlic and cook briefly until fragrant.
  4. Add pineapple and cook until softened and juicy.
  5. Stir in sugar, vinegar, and spices, then simmer until thickened.
  6. Return bacon to the pan and continue cooking until jam-like consistency forms.
  7. Cool slightly before storing in jars or serving.

Notes

Best served after resting for a few hours to deepen flavor.
