Ingredients
  

Bread Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup granulated sugar
  • 0.5 cup unsalted butter melted
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple undrained
  • 0.25 cup milk

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan.
  2. Whisk together flour, baking powder, baking soda, and salt.
  3. Mix sugar and melted butter until smooth. Add eggs and vanilla.
  4. Stir in crushed pineapple with juice.
  5. Add dry ingredients alternating with milk. Mix gently.
  6. Pour batter into pan and smooth top.
  7. Bake 50–60 minutes until a toothpick comes out clean.
  8. Cool before slicing and serving.

Notes

Do not drain the pineapple for best moisture.
