Ingredients
  

Gravy
  • 1 lb breakfast sausage mild or hot
  • 2 tbsp butter
  • 0.25 cup all-purpose flour
  • 3 cups whole milk
  • 1 tsp salt adjust to taste
  • 1-2 tsp black pepper freshly cracked
  • red pepper flakes optional

Method
 

  1. Cook sausage in a large skillet over medium-high heat, breaking it into crumbles until browned.
  2. Add butter and stir until melted into the sausage.
  3. Sprinkle flour over the sausage and cook for 1–2 minutes, stirring frequently.
  4. Slowly pour in milk while stirring constantly to avoid lumps.
  5. Add salt, black pepper, and optional seasonings.
  6. Simmer 3–4 minutes until gravy thickens. Adjust consistency as desired.
  7. Serve hot over biscuits.

Notes

If gravy thickens too much, add a splash of extra milk when reheating.
