Method
- Preheat oven to 375°F (190°C). Lightly grease a casserole dish.
- Season pork chops with salt, pepper, paprika, and Italian seasoning.
- Heat olive oil and butter in a skillet over medium-high heat and sear pork chops for 2–3 minutes per side.
- Remove pork chops and sauté onions until softened. Add garlic and cook briefly.
- Mix rice, cream of mushroom soup, chicken broth, onions, and garlic in a bowl.
- Spread rice mixture into casserole dish and place pork chops on top.
- Cover tightly with foil and bake for 50 minutes.
- Remove foil and continue baking 15–20 minutes until pork is fully cooked and rice is tender.
- Add cheese during final 5 minutes if desired. Garnish with parsley and serve warm.
Notes
For extra flavor, use cream of chicken soup or add sautéed mushrooms and vegetables to the rice mixture.
