Ingredients
  

Casserole
  • 4 bone-in pork chops
  • 1 cup long grain white rice uncooked
  • 1 can cream of mushroom soup
  • 2 cups chicken broth
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup cheddar cheese optional
  • 2 tbsp fresh parsley chopped

  • Casserole dish
  • Mixing bowl
  • Aluminum foil

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a casserole dish.
  2. Season pork chops with salt, pepper, paprika, and Italian seasoning.
  3. Heat olive oil and butter in a skillet over medium-high heat and sear pork chops for 2–3 minutes per side.
  4. Remove pork chops and sauté onions until softened. Add garlic and cook briefly.
  5. Mix rice, cream of mushroom soup, chicken broth, onions, and garlic in a bowl.
  6. Spread rice mixture into casserole dish and place pork chops on top.
  7. Cover tightly with foil and bake for 50 minutes.
  8. Remove foil and continue baking 15–20 minutes until pork is fully cooked and rice is tender.
  9. Add cheese during final 5 minutes if desired. Garnish with parsley and serve warm.

Notes

For extra flavor, use cream of chicken soup or add sautéed mushrooms and vegetables to the rice mixture.
