Method
- Season pork chops with salt, pepper, garlic powder, and onion powder.
- Heat olive oil and butter in a skillet over medium-high heat. Sear pork chops 3–4 minutes per side until golden. Remove and set aside.
- In the same skillet, melt butter, add onions, and sauté 2–3 minutes. Add garlic and cook 30 seconds.
- Add mushrooms and cook 5–6 minutes until browned. Stir in thyme and paprika.
- Pour in chicken broth, scrape up browned bits, and simmer 2–3 minutes.
- Reduce heat. Stir in cream, Dijon, and Parmesan. Simmer until thickened. Adjust seasoning.
- Return pork chops to skillet, spoon sauce over, and simmer 5 minutes or until fully cooked.
- Garnish with parsley and serve warm.
Notes
For extra flavor, add a splash of white wine when deglazing the pan.
