Ingredients
  

  • 4 pork chops 1-inch thick, bone-in or boneless
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil
  • 1 tbsp butter for searing
  • 2 tbsp butter for sauce
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 10 oz mushrooms sliced
  • 1 tsp dried thyme
  • 0.5 tsp paprika
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tsp Dijon mustard optional
  • 0.25 cup Parmesan cheese grated
  • salt and black pepper to taste
  • fresh parsley for garnish

Equipment

Method
 

  1. Season pork chops with salt, pepper, garlic powder, and onion powder.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear pork chops 3–4 minutes per side until golden. Remove and set aside.
  3. In the same skillet, melt butter, add onions, and sauté 2–3 minutes. Add garlic and cook 30 seconds.
  4. Add mushrooms and cook 5–6 minutes until browned. Stir in thyme and paprika.
  5. Pour in chicken broth, scrape up browned bits, and simmer 2–3 minutes.
  6. Reduce heat. Stir in cream, Dijon, and Parmesan. Simmer until thickened. Adjust seasoning.
  7. Return pork chops to skillet, spoon sauce over, and simmer 5 minutes or until fully cooked.
  8. Garnish with parsley and serve warm.

Notes

For extra flavor, add a splash of white wine when deglazing the pan.
