Ingredients
  

Main
  • 1 pork tenderloin about 1–1.5 lbs
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tbsp Dijon mustard
  • 1 tsp whole grain mustard optional
  • 1 tsp thyme
  • salt and pepper to taste
  • 1 tbsp parsley chopped

Method
 

  1. Season pork tenderloin with salt and pepper.
  2. Sear in hot oil until browned on all sides.
  3. Cook through until internal temperature reaches 145°F.
  4. Remove and rest the pork.
  5. Sauté garlic in butter.
  6. Add broth and simmer.
  7. Stir in cream and mustard.
  8. Season and add herbs.
  9. Slice pork and serve with sauce.

Adjust mustard level for tanginess preference.
