Ingredients
  

Soup Base
  • 6 slices bacon chopped
  • 2 tbsp butter
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 0.25 cup all-purpose flour
  • 4 cups chicken broth
  • 3 cups russet potatoes peeled and diced
  • 1 cup milk
  • 0.75 cup heavy cream
  • 1.5 cups cheddar cheese shredded

Method
 

  1. Cook bacon in a large pot until crisp. Remove and set aside.
  2. Sauté onion and garlic in bacon fat and butter until softened.
  3. Stir in flour and cook briefly, then whisk in broth.
  4. Add potatoes and simmer until tender.
  5. Mash some potatoes to thicken the soup.
  6. Stir in milk, cream, cheese, and bacon. Simmer gently.
  7. Season to taste and serve hot.

Notes

Adjust thickness with extra broth or milk as needed.
