Ingredients
  

Pumpkin Filling
  • 0.5 cup pumpkin purée
  • 3 oz cream cheese softened
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.5 tsp vanilla extract
Roll Ups
  • 12 slices bread crust removed & flattened
  • 2 eggs
  • 0.25 cup milk
  • 0.5 tsp cinnamon
  • 1 tsp vanilla extract
  • butter for frying
Cinnamon Sugar Coating
  • 0.25 cup sugar
  • 1 tsp cinnamon

Method
 

  1. Mix pumpkin purée, cream cheese, brown sugar, cinnamon, nutmeg, and vanilla until smooth.
  2. Trim crusts from bread and flatten each slice with a rolling pin.
  3. Spread pumpkin filling on each slice and roll tightly.
  4. Whisk eggs, milk, cinnamon, and vanilla in a bowl.
  5. Dip each roll in the egg mixture, coating all sides.
  6. Heat butter in a skillet and cook roll ups until golden brown on all sides.
  7. Roll freshly cooked roll ups in cinnamon sugar and serve warm.

Notes

Best served immediately; reheat in air fryer to restore crispness.
