- Mix pumpkin purée, cream cheese, brown sugar, cinnamon, nutmeg, and vanilla until smooth.
- Trim crusts from bread and flatten each slice with a rolling pin.
- Spread pumpkin filling on each slice and roll tightly.
- Whisk eggs, milk, cinnamon, and vanilla in a bowl.
- Dip each roll in the egg mixture, coating all sides.
- Heat butter in a skillet and cook roll ups until golden brown on all sides.
- Roll freshly cooked roll ups in cinnamon sugar and serve warm.
