  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp cloves optional
  • 0.5 cup unsalted butter melted
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 0.5 cup applesauce unsweetened
  • 0.25 cup milk

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin.
  2. Whisk together flour, baking powder, baking soda, salt, and spices.
  3. Mix melted butter with sugars until smooth.
  4. Add eggs and vanilla extract, mixing well.
  5. Stir in pumpkin puree and applesauce.
  6. Combine dry and wet ingredients, alternating with milk.
  7. Fill muffin cups and bake for 18–22 minutes.
  8. Cool on a wire rack before serving.

Notes
