Ingredients
  

Fish
  • 4 cod fillets about 6 oz each
  • 0.5 cup mayonnaise
  • 0.5 cup grated parmesan cheese
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley chopped
  • lemon wedges for serving

Method
 

  1. Preheat oven to 400°F (200°C) and prepare a baking dish.
  2. Pat cod fillets dry and place in baking dish.
  3. Mix mayonnaise, parmesan, garlic, lemon juice, paprika, onion powder, salt, and pepper.
  4. Spread mixture evenly over cod fillets.
  5. Bake for 12–15 minutes until cod flakes easily.
  6. Broil for 2–3 minutes for extra browning if desired.
  7. Garnish with parsley and serve with lemon wedges.

Notes

Use fresh parmesan for best browning and flavor. Avoid overcooking to keep fish tender.
