Method
- Season chicken with salt and pepper.
- Sear chicken in olive oil until golden and cooked through. Remove and set aside.
- Sauté mushrooms in butter until tender.
- Add garlic and cook briefly.
- Pour in broth and simmer.
- Stir in cream, Parmesan, and thyme. Simmer until thickened.
- Return chicken to skillet and simmer 5 minutes.
- Garnish with parsley and serve hot.
Notes
For extra flavor, add a splash of white wine before adding the broth.
