Ingredients
  

Main Ingredients
  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 8 oz fresh mushrooms sliced
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 1 tsp dried thyme
  • salt to taste
  • black pepper to taste
  • fresh parsley for garnish

Equipment

  • Large skillet
  • Cutting board
  • Knife
  • Wooden spoon

Method
 

  1. Season chicken with salt and pepper.
  2. Sear chicken in olive oil until golden and cooked through. Remove and set aside.
  3. Sauté mushrooms in butter until tender.
  4. Add garlic and cook briefly.
  5. Pour in broth and simmer.
  6. Stir in cream, Parmesan, and thyme. Simmer until thickened.
  7. Return chicken to skillet and simmer 5 minutes.
  8. Garnish with parsley and serve hot.

Notes

For extra flavor, add a splash of white wine before adding the broth.
