Ingredients
  

Quesadilla Filling
  • 2 cups fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 0.5 cup mozzarella cheese shredded
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes optional
  • 1 tsp lemon juice
Assembly
  • 4 flour tortillas medium size
  • 1 tbsp butter or olive oil for cooking

Method
 

  1. Heat olive oil in a skillet over medium heat and sauté minced garlic until fragrant.
  2. Add chopped spinach and cook until wilted, about 2–3 minutes.
  3. Season with black pepper, red pepper flakes, and lemon juice.
  4. Transfer spinach mixture to a bowl and mix with feta and mozzarella.
  5. Place filling on half of each tortilla and fold to close.
  6. Heat butter or olive oil in skillet and cook quesadillas until golden and crispy on both sides.
  7. Slice into wedges and serve warm with dipping sauce.

Notes

For extra crispiness cook quesadillas in a cast iron skillet and avoid overfilling.
