- Heat olive oil in a skillet over medium heat and sauté minced garlic until fragrant.
- Add chopped spinach and cook until wilted, about 2–3 minutes.
- Season with black pepper, red pepper flakes, and lemon juice.
- Transfer spinach mixture to a bowl and mix with feta and mozzarella.
- Place filling on half of each tortilla and fold to close.
- Heat butter or olive oil in skillet and cook quesadillas until golden and crispy on both sides.
- Slice into wedges and serve warm with dipping sauce.
Notes
For extra crispiness cook quesadillas in a cast iron skillet and avoid overfilling.
