Ingredients
  

Caramel Base
  • 1 cup crushed shortbread cookies
  • 0.5 cup unsalted butter
  • 1 cup brown sugar packed
  • 0.25 cup heavy cream
  • 1 tsp vanilla extract
Toppings
  • 0.5 cup semi-sweet chocolate chips optional
  • 0.5 tsp flaky sea salt

Method
 

  1. Place crushed cookies in a mixing bowl and set aside.
  2. Melt butter in a saucepan over medium heat.
  3. Stir in brown sugar and cook for 2–3 minutes until bubbly.
  4. Add heavy cream slowly while stirring continuously.
  5. Simmer mixture for 3–4 minutes until slightly thickened.
  6. Remove from heat and mix in vanilla extract.
  7. Pour caramel mixture over cookie crumbs and mix until combined.
  8. Shape mixture into small bite-sized balls or squares.
  9. Drizzle melted chocolate over bites if desired.
  10. Sprinkle with flaky sea salt and chill until firm.

Notes

Use high-quality sea salt for the best sweet-salty flavor balance.
