Ingredients
  

Salad
  • 2 large romaine lettuce heads chopped
  • 1 small red onion thinly sliced
  • 1 cup parmesan cheese shaved
Lemon Dressing
  • 3 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 4 tbsp extra virgin olive oil
  • 1 clove garlic minced
  • 1 tsp Dijon mustard
  • 0.5 tsp sea salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Wash and dry the romaine lettuce thoroughly, then chop into bite-sized pieces.
  2. Thinly slice the red onion and place it in the salad bowl with the lettuce.
  3. In a small bowl, whisk together lemon juice, lemon zest, olive oil, garlic, Dijon mustard, salt, pepper, and red pepper flakes.
  4. Pour the dressing over the salad and toss gently until evenly coated.
  5. Add shaved parmesan cheese and lightly toss once more.
  6. Serve immediately with extra lemon wedges and parmesan if desired.

Notes

For extra crunch, add homemade croutons or toasted pine nuts before serving.
