- Wash and dry the romaine lettuce thoroughly, then chop into bite-sized pieces.
- Thinly slice the red onion and place it in the salad bowl with the lettuce.
- In a small bowl, whisk together lemon juice, lemon zest, olive oil, garlic, Dijon mustard, salt, pepper, and red pepper flakes.
- Pour the dressing over the salad and toss gently until evenly coated.
- Add shaved parmesan cheese and lightly toss once more.
- Serve immediately with extra lemon wedges and parmesan if desired.
Notes
For extra crunch, add homemade croutons or toasted pine nuts before serving.
