Ingredients
  

Chicken
  • 4 chicken breasts boneless, skinless
  • 2 tbsp olive oil
  • 2 tbsp ranch seasoning
  • 3 cloves garlic minced
Sides
  • 2 cups rice uncooked
  • 4 cups broccoli florets
  • 2 cups carrots sliced
  • 2 bell peppers sliced

Equipment

  • Mixing bowls
  • Baking sheet
  • Knife
  • Cutting board

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Mix olive oil, ranch seasoning, garlic, and spices.
  3. Coat chicken with mixture and place on baking sheet.
  4. Toss vegetables with oil and arrange beside chicken.
  5. Bake 25–30 minutes until chicken is cooked through.
  6. Cook rice according to package instructions.
  7. Slice chicken and divide into containers with rice and vegetables.

Notes

Store in fridge up to 5 days or freeze for longer storage.
