  • 1 cup fresh raspberries
  • 0.75 cup coconut cream full-fat
  • 0.75 cup pineapple juice cold
  • 0.5 cup white rum
  • 1 tbsp fresh lime juice
  • 1 cup ice cubes

Method
 

  1. Blend raspberries until smooth, straining seeds if desired.
  2. Add coconut cream, pineapple juice, rum, lime juice, and ice to the blender.
  3. Blend until smooth, creamy, and chilled.
  4. Taste and adjust sweetness or acidity if needed.
  5. Pour into chilled glasses, garnish, and serve immediately.

Notes

Use coconut cream instead of coconut milk for best texture and flavor.
