Ingredients
  

Salad
  • 2 raw beets peeled and grated
  • 2 carrots peeled and grated
  • 1 apple thinly sliced or grated
Dressing
  • 2 tbsp lemon juice fresh
  • 2 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp parsley chopped
  • 2 tbsp sunflower seeds optional

Method
 

  1. Peel and grate the raw beets and carrots using a box grater or food processor.
  2. Slice or grate the apple and add it to a large mixing bowl with the vegetables.
  3. In a small bowl, whisk together lemon juice, olive oil, honey, salt, and black pepper.
  4. Pour the dressing over the grated vegetables and apples.
  5. Toss the salad thoroughly so everything is evenly coated.
  6. Sprinkle chopped parsley and sunflower seeds on top.
  7. Let the salad rest for 10 minutes to allow flavors to develop.
  8. Serve fresh or chilled.

Notes

For extra flavor, add toasted nuts, feta cheese, or raisins. The salad keeps well refrigerated for up to 3 days.
