Red Velvet Dough
  • 1.5 cups all-purpose flour
  • 1 tbsp cocoa powder
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • 0.25 cup milk
Cheesecake Filling
  • 8 oz cream cheese softened
  • 0.25 cup granulated sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a mini muffin pan.
  2. Mix dry ingredients for red velvet dough in a bowl.
  3. Cream butter and sugar, then add egg, vanilla, and food coloring.
  4. Combine wet and dry ingredients, alternating with milk.
  5. Beat cream cheese, sugar, and vanilla until smooth.
  6. Layer red velvet dough, cheesecake filling, then more dough in pan.
  7. Bake 12–15 minutes, cool completely, then chill before serving.
