Method
- Preheat oven to 325°F (163°C) and prepare a 9-inch springform pan.
- Mix red velvet crumbs, melted butter, and sugar. Press into the pan and bake for 10 minutes.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing gently.
- Mix in sour cream, vanilla, cocoa powder, vinegar, and food coloring.
- Pour filling over crust and smooth the top.
- Bake in water bath for 55–65 minutes until center slightly jiggles.
- Cool gradually, then chill for at least 4 hours.
- Cook strawberries, sugar, lemon juice, cornstarch, and water until thickened.
- Cool topping, spread over cheesecake, garnish, slice and serve.

Chill overnight for best texture and flavor.
