- Whisk water, sugar, and cocoa powder in a saucepan over medium heat until smooth and simmering.
- Remove from heat and stir in dark chocolate until melted.
- Add vanilla and salt; mix well.

- Churn in an ice cream maker until thick and smooth.
- Freeze for 3 hours or until firm before serving.
Notes
For smoother texture, add 1 tbsp corn syrup or vodka before churning.
